The Official Gazette of the Province of Guadalajara publishes the Provincial Agreement of Guadalajara for the industries and workers of bakeries, their retail outlets, and industries of this sector that also dedicate themselves to pastry, effective from January 1, 2025, to December 31, 2027. The Provincial Delegation of Guadalajara of the Ministry of Economy, Business and Employment, of the Regional Government of Castilla-La Mancha, orders its registration in the Registry of Collective Labor Agreements and Accords and its free publication. The text was signed on June 1, 2026, by U.G.T. and CC.OO., on one part, and by the Provincial Association of Bakery Entrepreneurs of Guadalajara, on the other.
The resolution, signed by the provincial delegate Susana Blas Esteban in Guadalajara on September 21, 2026, is issued in accordance with Article 90 of the Workers’ Statute and Royal Decree 713/2010, of May 28, regarding the registration and deposit of agreements. The text entered the Registry on July 1, 2026, with the code 19000245011982 and was corrected on September 10, 2026. The agreement is binding for companies and workers dedicated to the manufacture of bread, their retail outlets, and pastry industries, and applies to the workplaces of Guadalajara and its province.

Working day, vacations, and leave
The annual working day is set at 1,768 hours of effective work, with a pool of 40 hours per year that the company may use to alter the calendar. Vacations are 22 working days, 11 of which must be between July and September, and the agreement regulates paid leave for marriage (15 calendar days), hospitalization of relatives up to the second degree (five days), or death (two days). Suspension for birth is set at 19 weeks, extendable to 32 in cases of single parenthood.
Hiring, life insurance, and joint commission

- Companies must take out a collective insurance policy with 35,000 euros for total or absolute permanent disability and for death resulting from a workplace accident.
- The Joint Commission will consist of three employer representatives and three union representatives; it will resolve ordinary matters within 15 days and extraordinary matters within 48 hours, with the right of appeal to the III ASAC CLM.
- Early retirement at age 64 and access to partial retirement through a relief contract are contemplated.
Professional groups and disciplinary regime
The text classifies personnel into five groups: administrative, production (kneading and packaging), logistics, sales, and complementary. Companies are categorized by production volume: traditional and semi-mechanized up to 18,000 tons per year (15,000 from January 1, 2027), mechanized between 18,000 and 30,000 (between 15,001 and 30,000 from 2027), and high-performance above 30,001 tons. The disciplinary regime distinguishes between minor, serious, and very serious offenses, with sanctions ranging from a written warning to dismissal, and includes as an annex a prevention and action protocol against harassment.
The agreement provides labor and salary coverage for the entire bakery sector of the province for three years and consolidates annual increases of 3% with a review linked to the CPI. For the workforce, this implies the retroactive application of increases from January 2025 and a common framework for working hours, permits, and guarantees in a sector of continuous activity, including work on Sundays and holidays.
