Por FactBox Admin

The General Directorate of Labor of the Ministry of Economy, Finance and Employment of the Community of Madrid has registered and ordered the publication of the collective agreement of Do & Co Restauración España, S. L. U., effective from January 1, 2025, to December 31, 2027, with retroactive effects on the agreed salary concepts. The resolution, dated September 21, 2026, is published in the Official Gazette of the Community of Madrid (B.O.C.M.) no. 248, of October 17, 2026, with the official reference BOCM-20261017-1.
The text was signed by the negotiating commission on September 3, 2026, and is registered in the Registry of Collective Agreements, Collective Labor Agreements, and Equality Plans under code 28103662012023. The resolution is issued under article 90.2 and 3 of the Workers’ Statute and Royal Decree 713/2010, of May 28, and is signed by the Director General of Labor, Silvia Marina Parra Rudilla. An administrative appeal (recurso de alzada) may be filed against it before the Vice-Ministry of Economy and Employment within one month.
The territorial scope covers all company centers in the Community of Madrid, the only one existing at the time of signing being located on La Muñoza road, no number, Iberia industrial zone number 2 (Madrid). The agreement affects all labor personnel at that center, including those who join during its term.
Validity, retroactivity, and pending payments
The retroactivity from January 1, 2025, is limited to the remuneration concepts of the second chapter and the salary tables; from January 1, 2026, it applies to both fixed and variable concepts of the tables. Leaves, licenses, gratifications, and social benefits are excluded from this retroactivity.
The 2026 arrears will be paid in a back-pay payroll along with the ordinary payroll of September 2026. Additionally, in that same payroll, a single, extraordinary, non-consolidatable, and non-pensionable payment called “Bonus 2025” will be paid, intended for personnel employed as of December 31, 2025—including those retired during that year—calculated with a 4% increase over the tables of the provision and with a compensable and absorbable nature.
The agreement is extended year by year unless expressly denounced, which must be done in the last quarter of its validity or of any of its extensions.
Salary tables and bonuses
The monthly base salary for level I increases from 1,454.18 euros in 2025 to 1,572.84 euros in 2026 and 1,620.03 euros in 2027, the latter year calculated with the guaranteed 3% increase. Level VI, the lowest on the table, stands at 1,147.32, 1,240.94, and 1,278.17 euros, respectively.
The 2026 and 2027 increases apply exclusively to nine concepts:
- Base salary from the salary tables.
- Discontinuous day-off bonus and rotation bonus for periods shorter than a week.
- Flexible schedule transport bonus (PTHF) and distance transport bonus (PTD).
- Specialty bonus linked to the absence of collisions.
- Night shift differential (night hour).
- Laundry bonus and flexibility bonus.
For 2027, the discontinuous day-off bonus and the rotation bonus for periods shorter than a week are set at 31.63 euros per week; the PTHF at 328.48 euros per month; the PTD Pista at 256.92 euros; laundry at 146.25 euros and the flexibility bonus at 57.65 euros. The specialty bonus for aircraft collisions ranges from 1,140.16 euros annually with zero collisions to 745.48 euros with nine, and is not accrued from ten collisions onwards.
Working day, breaks and other conditions
The ordinary working day is an average of 40 hours per week on an annual basis, with a maximum of 1,800 hours, and eight hours per day, which can be voluntarily extended to ten. Vacations are 30 calendar days, in two periods of fifteen, one in high season and one in low season.
The limit for overtime is 80 hours annually per worker, compensable with two hours of rest for every hour worked or with a 100% surcharge over the value of the ordinary hour. In cases of temporary disability, the company supplements up to 100% of the salary from the first day in the event of an accident and for the first sick leave of the year.
The highest amount loans are set at an annual maximum of 120,202.42 euros, with 2,103.54 euros as the maximum individual amount. The Joint Commission, consisting of twelve members—six representing the workers and six representing the company—must be established within fifteen days following the publication of the agreement.
Impact on the workforce
The agreement consolidates three years of labor conditions at the airport catering center in La Muñoza and regularizes the purchasing power of the workforce through back pay and an already accrued extraordinary payment, while organizing shifts, days off, and bonuses for a group with particularly fragmented schedules. The text also maintains the current Equality Plan and LGTBI Plan and regulates international travel, which is voluntary and carries a gross compensation of 60 euros per day.
